Recipe of the day: Cucumber-Grape Sweet Raita



Hello lovely foodies! How are you? I'm trying to survive in the extreme-heat of Malda!! 😛 Hope you are doing well and taking care of your family to beat the heat! In summer, our body needs water; so drink sufficient water and give your children and other family members, too. To fight against heat, curd helps us a lot. Sometimes, we become bored with raw curd or Raita. Today, I am going to share a special Raita-recipe, which you never eat; I presume! 😀 Try it for a change………

Cucumber-Grape Sweet Raita


 

Prep Time:           15mins

Cook Time:           5mins

Serves:               4People

 

Ingredients:

  • Cucumber (medium):   2 pieces
  • Grape:                         100gm.
  • Curd:                           200gm.
  • Chat Mashala:             a pinch
  • Sugar:                         1 1/2 teaspoon
  • Salt:                            to taste


Method:


  1. Wash and peel the cucumbers, and grate them very well.
  2. Smash the grapes very well. You can use a smasher.
  3. Take the curd in a bowl and whisk to smooth it.
  4. Add the grated cucumber, smashed grapes, chat mashala, salt and sugar to the curd and whisk very well.
  5. Your Raita is ready now. Keep it in refrigerator for few minutes and serve.


My Tip: You can add some black-pepper powder to get a sizzling taste.

Mamma’s Kitchen Is Ready for Jamai Sashti with LAL HIT - #SayNoToFoodPoisoning

How are you all in this summer? It’s quite hot in West Bengal but the weather can’t stop we Bengalis to enjoy all the food and festivals! This festival is dedicated to the son-in-law; as well as the daughter of the house, and especially celebrated in West Bengal. I’m so excited to go to my parents’ house in this occasion. My mom came to invite us last week. When she entered in my kitchen, mom was so much surprised; and asked me disbelievingly – ‘How do you keep your kitchen so clean and how does it smell so well? So … fellow-foodies; do you know what the secret of my kitchen is? Well, it’s simple- ‘LAL HIT’! Not only has my mom, but everybody who visits my kitchen asks me about the wonderful mild fragrance! ‘Jamai Sashti’ is the day for every son-in-law. It’s the day he is pampered with a wide assortment of tasty dishes especially prepared by the mother-in-law. This popular festival falls on the sixth day during the Shukla Paksha (Waxing Phase of a moon) in the Bengali month of Jaishtho (May – June). It always too hot in this time, and you need to cook food with a lot of care to maximize the happiness. Here’s a special dish from my mom’s kitchen. Not too spicy, but too much delicious.
Try it, you surely will love it!


Doi Chicken





Prep Time:            30mins
Cook Time:           15mins
Serves:                3 People

Ingredients:

  1. Chicken (Boneless):               5oogm.
  2. Curd:                                     100gm
  3. Onion (Slice):                        2pieces
  4. Onion Paste:                          3 tablespoon
  5. Ginger paste: -                       1/2 tablespoon
  6. Garlic Past:                            2 tablespoon
  7. Cashew nut paste: -                2 tablespoon.
  8. Fenugreek (Methi) Seeds:     1/2 teaspoon
  9. Butter:                                    1/2 tablespoon
  10. Sugar:                                     to taste
  11. Salt:                                        to taste


Method:

  • Marinate the chicken with curd, onion - ginger - garlic paste and little of salt. Keep it in refrigerator for minimum 2-3 hrs.
  • Heat the butter in a pan.
  • Add the fenugreek seeds to temper and let them splutter.
  • Add one teaspoon garlic paste in the pan and fry for 30 sec.
  • Then, add the sliced garlic in it. Fry till the onions become translucent.
  • Now, add the marinated chicken, cashew paste, salt, sugar and mix very well.
  • Cover the pan with a lid and cook until the chicken well cooked.
  • Garnish with green chilies and serve hot.

My Tip: Add some green chilies before cover, if you want to make it little hot!
