Recipe of the day: Chanar Kofta Curry

Chanar Kofta Curry (Kofta Curry with Cottage Paneer)

 

Ingredients:

  1. Chana or Cottage Paneer:-                   200gm.
  2. Suji (semolina):-                                  2 tablespoon 
  3. Potato(big size):-                                3 pieces 
  4. Onion (slice in fine pieces):-               3pieces 
  5. Ginger paste: -                                    1teaspoon 
  6. Garlic paste :-                                     1teaspoon           
  7. Red Chili Powder (if you want):-          1teaspoon 
  8. Kashmiri red Chili Powder:-                 1 teaspoon 
  9. Cumin Powder:-                                   1teaspoon 
  10. Coriander Powder:-                             1teaspoon 
  11. Turmeric Powder:-                              1/2teaspoon 
  12. Bay leaves:-                                        2pieces 
  13. Cumin Seeds:-                                    ½ teaspoons 
  14. Garam Mashala (powder):-                  1/2teaspoon 
  15. Curd (Dahi) (blended):-                      100gm. 
  16. Mustard / Refined Oil: -                    to need 
  17. Sugar:-                                              1teaspoon  
  18. Ghee:-                                                1teaspoon 
  19. Salt:-                                                 to taste

Process:

 For Kofta:



  1. Mix the chana or cottage paneer together and knead them with the palm very well.
  2. Now, make balls from this mixture like lemon and deep fry in oil. Roll the Koftas in cornflower before putting them in oil. Your Kofta is ready now.

      For curry:

 

  1. Cut the potatoes in square pieces.
  2. Heat the oil in a heavy bottom pan and fry the potatoes with salt and a pinch of turmeric powder till it become brownish.
  3. In the same oil, pour in the bay leaves and cumin seeds and fry till it smells.
  4. Add the onion paste, ginger paste, cumin powder and Coriander Powder, curd, turmeric powder, sugar and salt and mix well. Cook for 2-3min. and doesn’t stop stirring.
  5. When it become dry, add the fried potatoes and 1/2cup of water. Cook more 2min and continue stirring.
  6. Add sufficient water (as the Koftas absolve much water). Cover and let it cook for 10-15 minutes on medium flame.
  7. Add the Koftas when the potato well cooked and let it cook for 5 minutes on low flame.
  8. Take it off the flame when the Koftas become soft and absolve water.
  9. Drizzle spoonful ghee and garam mashala powder just before serving.
  10. Serve hot with Rice or plain Roti or Paratha.
 

Tips of the day

 

1. Garlic skin comes off easily if the garlic cloves are slightly warmed before peeling.

2. To keep the chilies fresh for a longer time, remove the stems before storing.

Recipe of the day: Love-Cutlet





Helloo foodies! First of all HAPPY VALENTINES DAY to all of you! Love is in the air…..so, today I come with a special recipe and some special tips! Have a look….


Love-Cutlet


  Ingredients:

  • Boneless chicken:                        1/2 kg
  • Potato (boiled & mashed):           1 piece
  • Onion (big):                                 1 piece
  • Ginger (chopped):                       1 tablespoon
  • Garlic (chopped):                        2 tablespoon
  • Green chilli (chopped):               8-10 pieces 
  • Pepper powder:                          1teaspoon
  • Garam Masala Powder:               1 teaspoon
  • Bread crumbs:                           1cup
  • Egg:                                           1 or 2 piece
  • Refined Oil:                               ½ lit.
  • Salt:                                          to taste


Method:

  1. Cook & mince the chicken. 
  2. Sauté onion till it becomes soft.
  3. Add salt, pepper powder & garam masala.
  4. Add chopped ginger, green chilies
  5. Add minced chicken. Mix well. Stir for 5 minutes & remove from gas.
  6. Allow the mixture to cool. Once it is cooled add mash potatoes & mix well.
  7. Make small balls with the mixture & roll into love shapes.
  8. Beat the egg.
  9. Dip each cutlet in egg & roll with bread crumbs.
  10. Deep fry in oil.
  11. Serve hot with tomato sauce, salad and lots of love.

*If you are a vegetarian, then add boiled vegetables in the place of chicken.

Recipe of the day: Flat Beans Paturi


Hello foodies! In Bengal, you can find many types of ‘Paturi’. It is a special dish, made with paste of mustard seeds. Today I’m going to share a veg-paturi. Try it and share your experiences……

Flat Beans Paturi


INGREDIENTS:

  • Flat beans (Sem):                      10-12peices
  • Mustard paste:                          4tablesp.
  • Fresh coriander (chopped):        ½ cup
  • Tomato (cut in 8peices):             1peice
  • Green chili:                                4-5
  • Turmarik Powder:                       a pinch
  • Mustard Oil:                              1/2cup
  • Sugar:                                        1/4teasp.
  • Salt:                                           to taste

METHOD:

  1. Cut the beans into 2 pieces (if the the size of the size of beans is small or medium, then no need to cut).
  2. Marinated the beans with Mustard paste, turmeric powder, salt, sugar and oil and keep aside for 10-15min.
  3. Now, i) take the marinated beans in a steal-body tiffin box and put it in deep pan with full of water. Heat the pan with the tiffin box around 15 min and take the gas off. Open the box and add the coriander in it, mix well and cover it for 5min.
  4. ii) You can do it in another process. Heat oil in a pan. Add the marinated beans to it. Add little water, mix well and cover it for 4-5min. Add ½ of the corianders, when the beans are cooked. Off the gas when it dry and add the rest corianders. (If you try the second method, then use ½ of oil for marinate.)
  5. Serve it hot with steamed rice.

Tips of the day


1. If the lemon or lime is hard, put it in warm water for 5-10 minutes to make it easier for squeeze.

2. Apply a paste of sodium bicarbonate and water on the walls and floor of the oven and keep the oven on low heat for about half an hour. Dried food can easily be removed.
